What is nougat in Snickers? ›
TODAY. For Snickers, that basic recipe is a nougat base made with egg whites, sugar and vanilla (a mixture Mars called "frap"). Then, freshly roasted peanuts are covered in caramel. The caramel mixture is layered on top of the nougat then machines cut the mixture into long, thin bars.
The taste of good quality nougat must be balanced between honey and almond, which is why the percentages are so important to us. The flavor of toasted almonds should predominate and be sweetened with the aroma of pure honey. A nougat with too much sugar would be sweet, but its flavor would be more “neutral” and poor.
