Learn how to roll your own egg rolls, and get the tips you need to make the best egg rolls ever.

I will tell you honestly that I have never actually made a real Chinese egg roll. I have, however, used egg roll wrappers to make all kinds of non-egg-roll rolls, so I feel like I’m qualified to share what I’ve learned.

The thing I make with egg roll wrappers most often is quick mozzarella sticks in the air fryer. It’s seriously one of my favorite snacks. All you do is roll a stick of string cheese up in an egg roll wrapper and then brush or spray it with a bit of oil, and then cook it in the air fryer for 6 minutes. That’s it!

Because string cheese is my favorite thing to roll into egg roll wrappers, that’s what I’ve used below to demonstrate. But any filling will work. I bet even sweet chocolaty things would be amazing in there!!!

What Kind Of Wrapper To Use

Get large egg roll wrappers. These are about 6 inches square. Don’t use wonton wrappers. They won’t be big enough.

Egg roll wrappers are sold in the refrigerated section of the produce department in most grocery stores. If you don’t see them, ask someone since they’re sometimes hard to spot.

Can You Make Your Own Egg Roll Wrappers?

You actually can make homemade egg roll wrappers. For those, you make a batter of egg and flour and then you pour it into a pan and cook it. It’s kind of like you’re making a crepe. There are also other versions where you make a dough and then roll it out. You can get both recipes over here.

It’s much easier to buy them though. Just sayin’.

How To Roll Egg Rolls

Here we go. As mentioned, I’m using string cheese as my filling but you can use anything.

If the filling is cold, that will be easiest and will work best, so do chill it down before starting. Be sure to remove excess moisture as well. You don’t want the heat or the wetness from your filling to make the wrapper soggy.

To roll the egg roll, start by putting an egg roll wrapper on a plate or cutting board.

Moisten the edges with a bit of water. Egg wash works here too and it actually even works a bit better. Beat together an egg with 1 tablespoon of water and use that to lightly moisten the edges to help seal them together so nothing leaks out.

Put your filling in the middle, running along the diagonal center from corner to corner, like this.

Then fold one corner all the way over the filling, almost folding the wrapper in half, corner to corner.

Fold the side corners in towards the middle, burrito-style.

Roll the filling towards the remaining corner so you have this nice cylinder. Make sure that the water you used to moisten the edges has sealed them into place.

Here is what it looks like from the end. You can tuck these ends in better if desired but they’ll be just fine like this.
