Homemade caramel apples...yum!

I love homemade caramel apples, but they are so messy and are too big to eat all at once. I wanted to make a few this fall but knew that the kids wouldn’t be able to eat a whole one and it would get all over everywhere.

What to do? How about cutting the apples up into pieces and making caramel apple slices on a stick? I guess you could call them caramel applesicles or caramel apple pops! I see online that others have had this idea too, of course, but I am still excited to try it.

Which kind of apples should you use?

It's good to use tart apples when making caramel covered apples to offset the super sweetness of the caramel. A variety like Granny Smith is Papa’s favorite and Fuji or Gala are my favorites (not as tart). These are good choices. But you can choose whatever type of apple you would like, all will work in this treat.

Start by cutting the apple in half and then into slices. I don’t want to bite into a seed, so I cut the seed areas out of the slices. The key is making the slices thick enough to get a stick into the bottom. I’m guessing the slices are about ¾ an inch thick.

An apple corer also works wonderfully for cutting apple slices. The juice just shot everywhere as I cut the apples, they were such juicy apples.

How to Make Caramel Apples on a Stick

These small dowel sticks were so easy to get into the apples. I would recommend using them if possible.

The popsicle sticks may be a little hard to insert into the bottom of the apple, so it helps to cut a small slit and then push the Popsicle Craft Sticks in firmly.

Towel dry the apples and then put them in the refrigerator to chill while melting the Caramels.

How to Melt the Caramel

I used wrapped Caramels to make the caramel apple dip. I thought about making homemade caramel for the dipping but went the easy route. Fast and easy is typically my M.O.

One 11 ounce bag of caramels easily covered the slices of two large apples and could have done another had I gone a bit lighter on caramel as I dipped.

Melt the Caramels in a double boiler or in the microwave (checking and stirring every 20 seconds or so to avoid overcooking).

Ways to Mix It Up. The more the merrier!

Option 1:

Dip the apples in the Caramels and set on a Cookie Sheet covered with Parchment Paper.

Option 2:

Sprinkle the caramel covered apple immediately with chopped nuts/Peanuts and/or Sprinkles.

Option 3:

Melt the Chocolate Chips in a double boiler or in the microwave (checking and stirring every 20 seconds or so to avoid overcooking).

Use a spoon to drizzle the chocolate over the apples. OR... Put the chocolate in a small plastic bag, cut the corner off and use this as a piping bag. Drizzle the melted Chocolate Chips over the caramel dipped apples.

Immediately use Sprinkles and/or nuts/Peanuts if you want.

A Few Tips For This Yummy Dessert

There are two things that a person needs to consider when making Caramel Apple Slices on a Stick rather than traditional caramel apples.

First, once and apple is cut it begins to turn brown.

This is a treat that is best eaten right away.

Second, the cut apple adds juice to the caramel and it will get runny.

SO- this is a treat that needs to be eaten right away. Just cut up the amount of apples you are going to eat, make the yummy caramel apple slices on a stick and EAT THEM UP!! The caramel can be placed in a small container and will harden up. You can melt it again for another treat later.

I think the ease of eating makes it worth it though!!

  • Cut apple in half, take out seeds, cut into slices about ¾ inch thick.

  • Make a small cut in the bottom of the apple slice and insert craft stick.

  • Melt the caramels according to package directions. Check often and stir.

  • Dip apple slices into the caramel and set on parchment lined cookie sheet. Refrigerate.

  • Optional- Melt chocolate chips and drizzle on caramel apple, sprinkle with chopped nuts and/or sprinkles. Be creative and have fun! YUM
