  • Spray a baking sheet with non-stick cooking spray or line with a silpat liner or parchment paper.
  • In a large bowl, combine Bisquick mix, raw sausage, shredded cheese, milk, and Italian seasoning. You can do this in your stand mixer if you have one with the dough hook or the paddle attachment. You can also use a spoon or use your hands. Just make sure to mix sausage and the ingredients until they are fully incorporated.
  • Using a cookie scoop, shape mixture into 1-inch balls. If mixture is crumbly and won’t form solid balls, add milk 1 tablespoon at a time. You don’t want too much moisture, but some may help bring it together.
  • Place all the uncooked sausage balls on baking sheet and repeat until all mixture is used.Don’t worry about crowding these.

What Kind of Cheese Should I Use?

We like regular cheddar cheese. It’s best to shred it yourself instead of buying pre-shredded cheese. You can also try sharp cheddar cheese, or a pepper jack would be good if you want a little kick to the sausage balls. You can use any of your favorite cheeses for this recipe.

Sausage Balls with Bisquick Recipe Variations

  • spicy sausage balls – use a spicy Italian sausage or add some red pepper flakes to the batter to spice up these cheesy sausage balls
  • green onions – slice some green onions and add to the mix
  • turkey sausage – if you want a lighter version you can substitute the pork sausage for turkey sausage – you may need to cook it a little less so it doesn’t dry out

These classic Bisquick sausage balls are a popular holiday appetizer and are a great game day recipe!

Sausage Balls Bisquick Recipe Tips

  • Use block cheese– grate block cheese for the smoothest balls. You certainly can use pre-grated cheese, but you’ll have better, smoother results if you grate it yourself.
  • Use room temperature ingredients– when the ingredients are room temperature they will mix together better.
  • Save room– Place the balls close together on baking sheet, but not touching.
  • Add more milk– if the mixture is too try to form balls, add a tablespoon more of milk until it comes together.
  • Spice it up– use hot sausage instead of regular or mild!
  • Use a mini-muffin tin– this is an easy way to make sure they are properly spaced.

Can You Freeze Sausage Balls?

Yes, you can freeze these before or after cooking. Make them ahead and freeze before cooking, up to 3-4 months.

To freeze: place individual sausage balls on a baking tray and flash freeze. Once frozen, place in a freezer bag or container and store in the freezer until ready to bake.

When baking from frozen, let them thaw 15 minutes on the counter before cooking.

To freeze after cooking, just place in a zip top bag or freezer-safe container.

Reheating Sausage Balls with Bisquick

When you are reheating frozen, but fully cooked, sausage balls place them on a baking sheet and bake at 350 for approximately 10-15 minutes.

You can also reheat them in the microwave for approximately 10 -20 seconds per sausage ball.

Sausage Ball Recipe with Bisquick FAQs

Why Are My Sausage Balls Dry?

There are several things that can cause sausage balls to be too dry. If you followed this recipe, it might be becase they were cooked too long and you need to adjust the time for your oven.

Why Did My Sausage Balls Go Flat?

Typically these balls, when made into round shapes using a cookie scoop and rolling in your hands, should retain their round shape. One reason some flatten when cooking if when pre-shredded cheese was used in the recipe. Pre-shredded cheese doesn’t hold up as well as if you shred the cheese by hand from a block cheese.
