Cynaderki wieprzowe or Polish pork kidneys are a traditional Polish dish that's full of nutrients. Pork kidneys can be easily made at home and taste really good!

Ingredients

  • 4 pork kidneys
  • 4 onions
  • 2-3 tbsps of pork lard or oil
  • 3 tbsps of all-purpose flour
  • 1 tsp of salt
  • ¼ tsp of black pepper
  • a pinch of marjoram (optional)
  • 2-3 cups of water or broth
  • fresh parsley to decorate

Instructions

  1. Cut the kidneys horizontally.
  2. Remove all the strings and membranes.
  3. Cover with fresh cold water and leave them like that for at least 1 hour.
  4. Drain and cut the kidneys into strips and cover them with fresh cold water. Keep them like that for 30 minutes.
  5. In the meantime, peel and cut the onions into half-moons.
  6. Fry the onions in oil.
  7. In the meantime, dry the kidney strips and add them to the caramelized onions.
  8. Fry for a few minutes, then add the flour and spices.
  9. Cover with water or broth and simmer for about 10 minutes until the meat is soft. Serve warm.
