What Is
Savoiardi (pronounced sa-voy-ar-di) are known in English as ladyfingers. They are very light, crumbly cookies with an oblong shape made with a special dough into which egg whites beaten separately are added to give the cookies an incredible airiness.
How To
Their lightness and crumbliness make them perfect for use in desserts, as they readily absorb creams and sauces. They can be used whole or crushed into a sort of crumble onto which a sauce or soft cream is poured over them. They are also good on their own when dipped into one’s morning tea or milk. They are commercially available but artisanal savoiardi can also be found.
Italian Tradition
Savoiardi are used in classic desserts like zuppa inglese, Charlottes and soufflés. They are an ingredient in one of the most famous treats in the world, tiramisù, but they also go nicely with crème anglaise, Bavarian cream or ice creams as well as fruit salads and hot chocolate, thanks to their ability to absorb liquids.

Savoiardi keep perfectly for ten days in an airtight container to preserve their crispness.
