Have you ever had Zucchini Bread? If not – STOP EVERYTHING – Print out this recipe and make it

Zucchini Bread is pretty much the BEST stuff around – there is 1 Zucchini in EACH loaf — so it is “healthy” ( okay okay okay maybe it is not super good for you but let’s just live in the delusion it is 🙂 )

I did make it a “bit” healthier by using whole wheat flour. You can make this recipe gluten – free by using gluten – free flour

As you will see almost everything you need in already in your pantry

This is the perfect recipe to have kids to help make — quick tip – If you have left over batter simply fill up some muffin tips and bake

Freeze the muffins and have them on hand for a quick breakfast or snack – I usually leave one out overnight to defrost 🙂

Another trick to shred the zucchini is using a cheese grater – I use one of the largest hole size — seriously it took about 4 minutes

This will make 2 Small Loafs

Ingredients

  • 3 Cups of Flour ( White, Wheat, or Gluten - Free)
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Salt
  • 1 teaspoon of Baking Soda
  • 1 Tablespoon of Vanilla
  • 4 Eggs
  • 1¼ Cup of Vegetable Oil
  • 2 cups of White Sugar
  • 2 Zucchini - Grated
  • 1 Cup of Walnuts - Chopped

Instructions

  1. Preheat oven to 325
  2. Grease 2 loaf pans - 8x4 works great ( I used a slightly larger in my recipe)
  3. Using a sifter - sift flour, salt, baking powder, baking soda, and cinnamon into a bowl ---- sifting makes the bread lighter 🙂
  4. In another bowl mix - oil, vanilla, eggs, and sugar
  5. Slowly add the flour mixture into the egg mixture --- once it is mixed add zucchini and walnuts
  6. Pour Batter into the loaf pans and bake for 1 hour
  7. Let it sit for 1 hour before taking out of the pan
  8. Enjoy!

    I made this last night, it is amazing! I didn’t know how much cinnamon to use so I just sprinkled some in, and I used sunflower seeds and chia seeds instead of nuts – a generous handful of each. I used two medium-sized zucchini (about 9 inches long), grated with the large side of the cheese grater. The bread is moist and sweet with a crunchy crust. I made one large loaf and six muffins. Perfect; thanks for this great recipe!

    Used to have a recipe long ago similar to this one. Made this today just following the ingredients, having made a similar recipe, added everything and noticed no cinnamon in the ingredients… I just put in a couple of teaspoons, just guessing. How much was supposed to go in?? Next time, I’ll probably bump it up to a tablespoon. After referring back, it was referred to in the directions.

    Finally found some time to make this, I used a Tsp of cinnamon. It turned out so super YUMMY! Even my in laws loved and they don’t like zucchini. Definitely putting this in my permanent recipe file.
