  • 14 cup butter
  • 14 cup flour
  • 12 teaspoon pepper
  • 1 teaspoon salt (to taste)
  • 2 cups milk
  • 2 12 ounces dried sliced beef

directions

  • Melt butter in a medium saucepan. Blend in flour, salt and pepper. Stir in milk. cook over medium heat until mixture boils and thickens, stirring constantly. Reduce the heat.
  • Tear beef into shreds and add to cream sauce. Heat through.
  • Serve over toast.

  1. This was so good, I'm typing this as I'm eating it... Creamed Chipped Beef was a bit of a staple in my small Baltimore neighborhood when I was a child and my Great Grand-mom's was the best. You would think that with such little ingredients, it would all taste the same but it never did until I found this recipe. I used Esskay (Baltimore, MD) dried beef just like my Grand-mom did and it taste identical. The only thing I would change next time is to not use additional salt which is odd for me because I LOVE salty things but the dried beef added enough salt to taste.

This recipe was made on January 4th., and I'm sorry it wasn't rated until now.After reading some of the other reviews, I decided to rinse off the salty beef in a lot of warm water.And except for using a 2.25 ounce jar of dried beef the recipe was made almost as it was written, the salt was left out. While preparing this, it reminded me of the many times we ate it growing up. I served it just the way my Mom did, over buttered toast. It tasted just as good as it did then. Thank you so much for posting a wonderful memory from my childhood. I WILL make it again. " Keep Smiling :) "

  3. You might want to try 2 envelopes of Buddig Dried Pastrami, instead of dried beef, and two hard boiled eggs diced to this basic recipe! A big step up!

  5. Loved it tasted just like my mom's recipe I lost! Only thing I did different was double the ingrediants because one can is 5oz and it was for 2.5 oz of meat and I love salt but I didnt add any because the first time I tried making this I followed the recipie and it was somsalty I couldnt eat it...I also rinsed the meat in a strainer and it came out amazing! You can add salt to ur dish at theend if u perfer, thats what id reccomend until youve cooked it and know how salty it is!!

  1. I made this recipe tonight. I’ve made others, but think this was actually even easier. The way u add the ingredients! The only thing I’d like to try is a tiny bit of Cheyenne Pepper to give it that lil zing! This tasted almost exactly like when my mom made this as a lil girl ?? So memorable, plus yummy = excellent!!

  2. I did not actually make this recipe but I know it well. All through my childhood my Mother would make this but she would use a drained can of tuna instead of the beef. Dad was in WWII and SOS and fruit co*cktail were two things he would not eat. He said that he'd had enough to last him a lifetime! It's one of my favorite comfort foods. Both my kids request it when they visit. Thanks for posting this easy but wonderful recipe.

  3. I think this recipe is a little bland and it has way too much salt. The chipped beef adds more than enough salt and I think the recipe would benefit from a pinch of cayenne pepper and a teaspoon or two of worcestershire sauce. A little tobasco sauce might also perk it up a bit. The alternative to chipped beef is ground beef, cooked and drained. Creamed ground beef is standard military breakfast fare, served with eggs and fried potatoes.

  5. As a navy brat, I learned to love this from the age of 3. My tweak is from my father a lifer in the navy. I Brown the chipped beef in the butter and then sprinkle the flour a top to make my roux A bit of Cayenne in place of the black pepper also add a different depth to the flavor
