"This is my version of Chicken Tortilla soup. It's very similar to the soup served at Max & Erma's restaurant chain. I threw it together one day using mostly leftovers from my fridge. It was a hit.. So now every time I roast a chicken, I make this the next day."

directions

  • Put chicken, skin bones and all, into a pot with 2 quarts of lightly salted water, and bring to boil. Important: the skin and bones make the broth taste great. that's where the flavor is. this wont work using skinless, boneless chicken breasts.
  • Reduce heat and simmer until chicken is starting to loosen from the bones and broth looks. well. like broth. (about 20 minutes).
  • Carefully, remove chicken from broth making sure to get any little bones that may be on the bottom of the pot. Set chicken aside to let cool.
  • Add onion, Rotel, cumin, garlic, chili powder, and black pepper to the pot. Add 1/2 tsp crushed pepper for medium heat, less if you like it mild, or more if you like it spicy. I use 1 teaspoons.
  • Stir, and let simmer until chicken is cool enough to handle.
  • Tear off chicken meat and place back into pot discarding skin and bones.
  • Cut off about a 2 inch section from a log of Velveeta cheese, then cut into cubes.
  • Add cheese, and cilantro to soup and stir over low heat until cheese is melted into the soup. Let simmer stirring often.
  • Stack corn tortillas and slice into thin shreds with a sharp knife. Cook tortilla shreds in a small amount of hot oil until crisp. Drain on paper towels.
  • To serve, ladle soup into individual bowls and top with a dollop of sour cream (optional) and the tortilla strips.

  1. Can this be adapted for slow cooker? Really want a thicker soup. I will try Mexican Velveeta and use more? I am assuming canned chicken broth will substitute for the whole boiling process, as we only eat chicken breats.

  1. I think I had way too much water to begin with. Also the 30 minute description isn't accurate with the directions of boiling and shredding the chicken. Nice flavor.

  2. This was a very good soup. It was a little thinner than what I am used to for a tortilla soup though. The flavors were perfect though. I had a problem in that I couldn't get velveeta....this is the Velveeta shortage year for the 2014 Superbowl....LOL! So I used a mix of Mexican shredded cheese. I wish I could have found Velveeta because it melts so much easier and smoother. The Mexican mix made my chicken and cilantro try and stick together. So I highly recommend using Velveeta to keep that from happening. Thanks for sharing!

  3. This soup is delicious! I was looking for a recipe that was similar to one we like at a local restaurant. This was it. It has so much flavor but not to spicy. I think I will cut back on the water the next time I make it. The only change I made was that I thickened it slightly. We loved it! Thanks for sharing.

  4. Used cooked chicken breast along with prepared chicken stock instead. Other than that, I followed the rest of the recipe and it turned out excellent. Thanks

FAQs

How do you tone down chicken tortilla soup? ›

Add Some Starches

The easiest way to tone down a spicy dish is to serve a smaller portion with plenty of rice, bread, potatoes, pasta, or plain starch to counter the heat. For soups and stews, raw and starchy vegetables like potatoes or carrots work well.

How can I thicken my tortilla soup? ›

You can thicken soup by adding flour, cornstarch, or another starchy substitute. For the best results, never add flour or cornstarch directly to your soup. If you do, it will clump up on top. Instead, ladle a small amount of broth into a separate bowl and let it cool.

What to eat on the side of chicken tortilla soup? ›

You can enjoy tortilla soup with many things, like tacos, burritos, and quesadillas. Mexican rice, chips with guacamole, roasted corn, black beans, and Mexican cornbread are also good choices.

What is a fun fact about tortilla soup? ›

Although the exact origin of tortilla soup is unknown, it is known that it comes from the Mexico City area in Mexico. Traditional tortilla soup is made with chicken broth combined with roasted tomatoes, onion, garlic, chiles and tortillas, cut into strips and fried.

How to make can chicken soup taste better? ›

Herbs: Fresh chives, thyme, or cilantro stirred in just before serving. Spices: Your soup is probably salty enough, but what about simmering a bay leaf in there for a while (don't forget to remove it before serving)? Depending on the soup's flavor profile, you could shake in some cumin or red pepper flakes.

Is it better to thicken soup with flour or cornstarch? ›

It's important to note that cornstarch has twice the thickening power of flour. If you need to substitute cornstarch to thicken liquid in a recipe that calls for ¼ cup (four tablespoons) flour, you only need two tablespoons cornstarch.

What is the best thickener for soup? ›

Whisking beurre manié (butter-flour paste) into simmering soup is the best way to thicken an otherwise too-watery soup. Add bits of the paste gradually and simmer to cook out any raw flour taste. The broth will be velvety smooth, rich, and thick.

What can I add to soup to make it thinner? ›

Chunkier soups, like black bean or lentil, tend to lean thick—and, it must be said, gloopy. To thin them out (and dial down the intense salinity), add more water or low-sodium stock while they're heating. (If you overdo it, don't stress: Continue simmering until the liquid has reduced to your desired consistency.)

What is chicken tortilla soup made of? ›

Chicken tortilla soup is a Mexican-inspired soup that has a tomato and chicken broth base. It is spiced with chili powder, cumin, smoked paprika, oregano, and has a little kick from the jalapeño. It also has hearty ingredients like beans, corn, and of course the shredded chicken.

Is chicken tortilla soup good to eat when sick? ›

Chicken tortilla soup is low in calories but high in flavor. The amino acid cysteine, contained in the chicken in this powerful soup, loosens secretions, thinning out mucus and promoting coughing, which is needed to clear your nose and throat.

Who invented chicken tortilla soup? ›

Although the exact origin of tortilla soup is unknown, it is known that it comes from the Mexico City area in Mexico. Traditional tortilla soup is made with chicken broth combined with roasted tomatoes, onion, garlic, chiles and tortillas, cut into strips and fried.

How do you make soup more interesting? ›

Finish your soup by tossing in some chiles or fresh herbs and giving it a drizzle of olive oil, a squeeze of lemon, or a sprinkle of lemon zest. "That way, one bite will have a lot of those ingredients, and the next one won't," says Kluger. "Soup is more interesting when one bite is different from another."

How long is leftover tortilla soup good for? ›

Fresh cilantro

And I always serve this soup with lime wedges for squeezing! Store leftover tortilla soup, separately from its toppings, for up to 4 days in the fridge. It also freezes well.

How do you tone down soup? ›

The easiest way to tone down a dish that's too spicy is to add more ingredients to lessen the proportion of the spicy element. If it's a soup or stew, try adding more liquid. Add more vegetables, protein, or starches, too — whatever ingredient you have extra of.

How do you neutralize soup? ›

Add Dairy: Dairy products like yogurt, sour cream, or coconut milk can help neutralize the spiciness. Stir them into the dish gradually until you reach the desired level of heat. Add Acid: Acidic ingredients like lemon juice or vinegar can help balance the heat. Start by adding small amounts and adjust to taste.

How do you fix taco soup that is too spicy? ›

Scoop a dollop of sour cream into your bowl of soup and stir it into the broth. The fat in the sour cream will help mask the spices and make your soup creamier. If the soup still tastes too spicy, drop in more sour cream until it's palatable. Sour cream works well for chili, chowder, and taco soup.

What can I add to chicken tortilla soup to make it less spicy? ›

Add sour cream or plain, preferably Greek style yogurt, (it's thicker). You can also use peanut —or other nut— butter. Add vinegar. You know that peppers in vinegar are less hot than fresh peppers.
